Phin Brewing Questions
Phin brewing is a traditional Vietnamese method of making coffee that involves using a small metal filter called a "phin." This simple yet effective device brews a single cup of coffee by allowing hot water to slowly pass through ground coffee, resulting in a strong, concentrated brew.
For optimal results in a phin filter, use a medium-coarse grind. The grind should be similar in texture to coarse sea salt. Too fine, and the water will not pass through properly, leading to over-extraction; too coarse, and the coffee will drip through too quickly, resulting in a weak brew.
All our ground coffee beans are pre-ground to the perfect size for use with any standard Phin filter.
If your coffee isn’t dripping through your phin filter, the grind may be too fine, causing a clog.
Other causes include tamping the coffee too tightly. Ensure you press the coffee grounds to level them using only light pressure. Do not compact them too much. If the issue persists, check if the filter is clean and clear of any blockages.
To clean our stainless steel phin filters, dismantle and rinse each part individually with warm water. You may use a soft brush or cloth to remove coffee grounds or oils.
Avoid using harsh detergents that can leave a residue.
Allow your filter to dry completely before reassembling it and placing it into storage.
Although both methods have similarities, the fundamental difference between a Phin filter and a pour-over is the brew time. Phin filters ensure a consistent but slow drip through the small holes in the bottom of the filter. This produces a distinctly strong brew, perfect for the bold and intense tastes associated with robusta beans. Typical brew times are between 5 and 7 minutes.
Conversely, pour-over coffee typically uses a slightly coarser grind and paper filter. The water is allowed to filter through the coffee more quickly, producing a cleaner, lighter-bodied coffee. This brewing method is preferred for brewing arabica coffee. Typical brew times are between 2 and 4 minutes.

Vietnamese coffee refers to both a style of coffee and a unique brewing method originating from Vietnam.
Vietnamese coffee is known for its strong, robust flavor, often prepared with a phin filter and served hot or cold with sweetened condensed milk.

The best way to brew Vietnamese coffee is using a phin filter. This is the traditional tool used to make coffee in Vietnam. It creates a strong, caffeinated brew that can be enjoyed black or sweetened with condensed milk.
Alternatively, you can make great Vietnamese coffee with an Aeropress or French Press.
Within the genus Coffea, there are an estimated 129 different species — however, just 2 make up about 99% of the coffee consumed worldwide.
Coffea robusta is our preferred bean of choice. It's loved for its high caffeine content (2X that of arabica coffee), potent antioxidant levels (again, 2X that of arabica), and low sugar content. Robusta beans prefer growing at lower altitudes, can withstand droughts, and produce about 3 times as much coffee per year compared to arabica.
Coffea arabica beans are known for their smoother, more acidic, and flavorful profile with a higher concentration of sugars and oils, giving them complex flavor characteristics. Arabica beans require a high altitude and use a lot of water to cultivate.
The ideal grind size varies depending on which brewing method you choose to employ:
Fine Grind — Espresso, Turkish Coffee, Moka Pot, Aeropress.
Medium Grind — Phin Filter, Pour over (V60/Chemex), Drip Coffee Makers, Siphon.
Generally, the finer the grind, the stronger the extraction. For robusta, this produces a stronger, more robust, and more intense taste. For arabica, fineer grinds typically result in over-extraction and overly acidic or bitter-tasting coffee.
You can always adjust the grind size to achieve the desired extraction and flavor.
Whole coffee beans are best enjoyed within a month of roasting for optimal freshness and flavor, though they will last up to 6 months if stored properly in an airtight container away from light, heat, and moisture.
Cold brew coffee is made by steeping coarsely ground coffee in cold water for an extended period, usually 12-24 hours. The result is a smooth, mild coffee with low acidity, which can be served cold or over ice.
Single-origin coffees are sourced from a single location, offering unique flavor profiles characteristic of their specific growing region. Blended coffees combine beans from multiple origins to create a balanced flavor, typically aimed at achieving a consistent taste profile.
Roast level preference is subjective and varies depending on the desired flavor profile:
Light roasts offer brighter, more acidic flavors.
Medium roasts provide a balance of acidity and body.
Dark roasts are less acidic, with a heavier body and bolder, smokier flavors.
We prefer darker roasts for most of our coffee but offer a few medium roasts for customers looking for more acidity and body in their coffee.
Natural (dry-processed) beans are dried with the cherry fruit still attached, resulting in a sweeter, fruitier coffee. Washed (wet-processed) beans have the fruit removed before drying, leading to a cleaner, more acidic coffee with pronounced clarity in flavor.
There’s also honey coffee, which has the cherries removed and dried with the slippery, sugary (honey-like) mucilage still attached.
Tea Questions
All tea comes from the same plant — Camelia sinensis — but the way it's processed determines its type. Once the leaves (and sometimes buds) are harvested, natural enzymes present in the plant begin to oxidize other compounds, transforming their appearance and flavor profiles over time. This is typically referred to as "fermentation."
White and green tea are processed immediately to stop the oxidation process — preserving the fresh, umami, and herby flavors inherent in the raw leaf.
Black tea is allowed to oxidize for several days before these enzymes are destroyed using heat. This darkens the color and alters the flavor of the leaves.
Oolong is the middle-ground between green and black tea — they're allowed to partially oxidize to provide a flavor profile that resembles aspects of both green and black tea.
Matcha is a finely ground powder made from specially grown and processed green tea leaves called tancha. Traditionally prepared by whisking the powder with hot water until frothy, it offers a rich, creamy texture and a vibrant green color. Matcha tea is an excellent source of L-theanine, caffeine, and antioxidants.
For best results, store Cafely loose-leaf tea and premium teabags in an airtight container away from light, moisture, and strong odors. A cool, dark place such as a drawer or cupboard is ideal to maintain freshness and flavor.
The optimal brewing techniques vary depending on the type of tea and your own personal preference.
In general, white and green teas should be steeped for shorter periods (20–60 seconds) with cooler water temperatures (80–90ºC or 175–195ºF).
Black teas can withstand higher temperatures and longer brew times (1–1.5 minutes and 90–100ºC or 195–210ºF).
Oolong teas fall somewhere in the middle. Greener oolongs should be brewed more like green tea, while darker oolongs should be brewed more like black tea.
Herbal teas are infusions made from herbs, fruits, seeds, or roots, not from the Camellia sinensis plant. They are often caffeine-free and can offer various flavors and health benefits. Popular herbal teas include peppermint, lemon balm, rooibos, ginger, valerian, chamomile, echinaceae, and hibiscus.
In general, herbal teas should be left to steep longer than traditional Camellia sinensis teas (5–10 minutes). For aromatic herbs like chamomile or mint, it’s a good idea to cover the tea while it steeps to prevent essential oils from evaporating.
Tea grown at higher altitudes often has a more nuanced flavor profile, with greater aromatic qualities and a lighter, more refined taste. The cooler climate found in higher altitudes slows leaf growth, concentrating flavors.
Sustainability Questions
Traditional farming practices may involve clearing large areas of forest for coffee plantations, which affects local ecosystems and wildlife habitats. The use of chemical pesticides and fertilizers can also lead to soil degradation and water contamination.
However, sustainable farming practices can mitigate many of these impacts, promoting biodiversity and conserving natural resources.
The robusta coffee bean especially lends itself to greener, more sustainable farming because of its drought tolerance, higher yields, and resistance to pests and diseases.
